Dungeon Keeper and Guardian
A couple of quick links:
#1 - A Flash-based RPG entitled, "The Guardian." I've only played a few minutes of it so far. Besides the fact that it's written in Flash, there's nothing too spectacular about it (that I have seen). But - hey, it's a free browser-playable RPG.

#2 - Retrospective on the making of Dungeon Keeper. I really enjoyed this game, though the multiplayer aspect was pretty much ludicrous. Plus, I loved possessing chickens and walking through my own dungeons in first-person perspective.

Have you tried Monsters Den: Book of Dread on Kong?
I think it's pretty neat. Very simple of course, but I really like the approach of abstracting the exploration part of it into an old school D&D module style map.
The combat system is pretty good too.

Yes, yes, YES!!! Please. If I didn't have a zillion projects on my plate, I'd totally tackle this one myself.
One of my list of "dream games" to do once I'm no longer taking AGES to complete a frickin' game is to make a game where you can play either the "dungeon master" (a la Dungeon Keeper), or a Hero - running through another player's dungeon (maybe with other players at your side). The real trick would be keeping it a fair between both sides.

Master of the Monster Lair, for the Nintendo DS, combines dungeon-keeping with running through as the hero.
You build the dungeon, attract and retain monsters, then charge in and slice them apart for loot. Kind of twisted, that way. :)

Ya, I really want to do a (small) MMO after the one I am currently working on where the players can play NPC enemies when they're bored.
I've got a lot of moderation and anonymization features in mind to keep the quality high. It should be fun.

Isn't 4th edition D&D supposed to be kinda like that?
Also, Dwarf Fortress. Build up a fortress and then adventure through it afterwards :)

But yeah - making it more of a contest of design versus player heroism. "Here's 200 points and limitations for a 5th level dungeon to make it fair. Do what you can to kill PCs. Have fun!"
